Sundried Tomato Veggie Wrap


Not Pictured This recipe is a home version of Au Bon Pains Fields of Feta, I noticed it’s no longer featured on their website either so glad to have this alternative for myself. Also I’ve noticed that in forgetting the cheese once that it’s really not needed as I’d eaten this wrap about 5 times before even noticing. Good if you’d like to get that taste yet written in as optional, plus this particular brand of pesto has some cheese in it. At any rate, enjoy:

Ingredients:
1 Organic Tortillas Whole Wheat (whole foods, can substitute other brand.)
1 lettuce leaf broken into small pieces
1/4 cup roasted red peppers
4 slices of Cucumber
Onions, Red
2 oz Severino Sun Dried Tomato Pesto (or similar version.)
1 tbs of Feta Cheese (optional)

Instructions:

Lay Whole Wheat Wrap on a plate and spread the Sun dried Tomato Pesto, next, place the lettuce on top, followed by the cucumber, onion, and red peppers in no particular order. Sprinkle feta cheese on top, wrap and eat.
