Easy Pleasing Meatloaf
2 lb.  lean ground beef
1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken
1 cup water
2 eggs, beaten
1/2 cup KRAFT Original Barbecue Sauce, divided

PREHEAT oven to 375°F. Mix all ingredients except 1/4 cup of the barbecue sauce.
SHAPE meat mixture into oval loaf in 13x9-inch baking dish; top with remaining 1/4 cup barbecue sauce.
BAKE 1 hour 15 min. or until cooked through (160ºF).

My Take
According to the Kraft Food and Family book, this makes 8 servings by the way. Important when measuring those calories, fat etc. The carbs are a wee bit on the high side, something to consider when planning out your meal for the day. Now to the actual review:) I thought this meatloaf was fabulous, very satisfying and I’ve never been a huge fan of meatloaf. I am a huge fan of stove top stuffing however, therefore if you are not might want to consider trying out a different recipe as you can taste the stuffing in each bite. It tends to bring the flavors together well and makes the meatloaf nice and moist.  The BBQ sauce was ok, I may try it again with ketchup or without any sauce because the bbq sauce was bit strong for me, has a lot to do with the kind I chose to use as well as the factor that I just may not have been in the mood for the sauce and kept picturing it with ketchup.

But overall, this meatloaf get’s 2 thumbs up from me. I ate it with mash potatoes and corn, definitely have to work on that next time being the amount of carbs for that one meal were out of the roof. Will most likely just do a meat and veggie next time being that the stuffing is build right in for me anyway.
